Hi, I'm Erin - the founder and maker behind Polar Bakes. I run a bespoke cake and postal box home bakery from Ebbw Vale, South Wales, specialising in handcrafted wedding cakes, celebration cakes and sweet treats made entirely to order.

Every cake I produce is designed, baked and finished by hand - no shortcuts, no outsourced tiers. I take on a limited number of orders each month to make sure each one gets the time, thought and care it deserves.

I offer delivery across South Wales and the surrounding area, with collection available directly from the home bakery. Whether you are planning a wedding, a milestone birthday or a bespoke gift, I would love to be part of it.

The Maker

Meet Erin

I joined the Royal Navy at 17, where I quickly became known as the ship's baker - making cakes for fellow sailors in a galley kitchen at sea. The Navy taught me discipline, precision and the ability to produce quality work under pressure. Those are qualities I bring to every cake I make today.

At 22 I left the service and channelled everything I had learned into building Polar Bakes. I chose to focus on bespoke orders rather than volume, because I believe the best cakes come from real collaboration - understanding what the occasion means to you and designing something that genuinely reflects it.

I specialise in buttercream finishes for both wedding and birthday cakes, and I am also able to produce fully vegan and gluten-free options on request. If you have a vision in mind, I want to hear it.

Every order - however large or small - follows the same careful process.

Consultation

We start with a detailed conversation about your occasion, your vision and your requirements. This can happen over email, phone or in person at the home bakery.

Design

Based on your brief, we develop a custom design proposal - incorporating your ideas with our experience and technical knowledge of what works.

Creation

Using quality ingredients and careful technique, we bake, build and decorate your cake entirely by hand. No stage is rushed.

Delivery or Collection

Your cake is carefully packaged and delivered to your venue, or prepared for collection at a time that suits you.

Polar Bakes is based in Ebbw Vale, in the South Wales valleys - ideally positioned to serve Cardiff, Newport, Brecon, Abergavenny, Monmouth, Hereford and the wider region.

For wedding cakes, I offer full delivery and on-site setup at your venue. For birthday cakes and other orders, I offer local delivery or collection directly from the home bakery. A second collection point near Hereford is also available for customers coming from Monmouth, Ross-on-Wye or over the border.
